Recipe of the Month - February 2010

Chocolate Covered Strawberries

Prepare a sweet Valentine’s Day treat for your friends and family! Ounce for ounce, strawberries have more vitamin C than citrus fruits. Their sweet flavor compliments bittersweet chocolate, which contains less sugar and milk than milk chocolate.

Parchment paper
4 oz. bittersweet chocolate
12 fresh strawberries, rinsed and dried

  1. Cover a cookie sheet or plate with parchment paper.
  2. Melt chocolate in a microwave- safe bowl, stirring every 30 seconds to prevent scorching. Or, cook over low heat, stirring constantly.
  3. Holding the leafy end, dip strawberries into the chocolate. Lift and twist slightly, allowing excess chocolate to drip off.
  4. Place strawberries on the parchment paper. Allow to cool for 30 minutes. Enjoy!

Optional: Melt 2 oz. of white chocolate and use a fork to drizzle over coated strawberries before drying.
