Recipe of the Month – November
Fluffy Mashed Cauliflower
This dish has the flavor and texture of traditional mashed potatoes but with a quarter of the calories. It’s also an excellent source of vitamin C and folate.
Ingredients: Serves 4
1 head cauliflower
3 cloves garlic, peeled and crushed
1/3 c. nonfat buttermilk
*Tip: To make your own buttermilk, mix 1 T. lemon juice or vinegar into 1 c. milk
2 tsp. olive oil
1 tsp. butter
½ tsp. salt
1 tsp. pepper
½ c freshly grated parmesan
- Break cauliflower into bite-size florets.
- Place florets, garlic, and ¼ cup water in a microwave-safe bowl. Cover and microwave on high for three to five minutes, or until tender.
- Pour into a large mixing bowl and add buttermilk, olive oil, butter, salt, and pepper. Blend with a hand mixer (or food processor) until smooth and creamy.
- Sprinkle with parmesan cheese. Serve warm.
